The tea plant is a member of the Camellia family (Camellia sinensis). The two
most common plants are Assam, a native of India and Bohea, which is
indigenous to China.
It is an evergreen plant, which grows in tropical and sub-tropical climates,
producing a small camellia like flower, though only the leaves are used in
tea - hence the phrase ‘tea leaves’.
The finest tea comes from regions above 5,000 feet where the plant grows more
slowly in the cooler air. This results in a more complex leaf with a much
better flavour.
A mature tea plant produces a growth of new shoots known as ‘flush’, which are
gathered by hand by tea pickers. In perfect growing conditions the plants
will grow new ‘flushes’ approximately every two weeks.
Did you know a single picker can harvest approximately 40kgs a day. That’s
enough leaves to process about 10kgs of finished tea!
